On average, people in English-speaking countries only eat 30% of their vegetables, leaving 70% for the compost heap. In Greece and Italy, superior cooking techniques that make vegetables taste better have led to people eating up to 90% of their vegetables, leaving only 10% for the compost heap. This is the leading cause of declining soil fertility in those countries.
